Learning to install your carseat!


According to the Child Passenger Safety Association of Canada 8 out of 10 carseats are installed incorrectly. That is a scary and crazy statistic!! 
Partner that with fire stations not offering drop in services anymore (that has been for awhile now) and the average mom, dad, caregiver etc.. who worries about if the car seats in their vehicles are installed correctly really don't didn't know that they do have a place to go.. 


Did you know that on the 3rd Thursday of every month the Edmonton St. Johns Ambulance centre offers a car seat program. It takes place 7pm-9pm. 
The program has limited space so you need to register.

The dentist visit coming up - I am feeling anxious for Carter.

At the end of March Carter had his scheduled dental appointment/cleaning and they found a cavity. Because Carter is only just 4 our dentist thought it was best to have Carter to go a pediatric dentist. We made our first visit at the beginning of April and wouldn't you know it, Carter actually has 2 cavities! They are on the same side and the same tooth on the top and the bottom (yea weird right?!?)

I have to do a little shout out to Pediatric Dentistry on 160, because seriously Carter didn't want to leave. Dr. Kurji is awesome, positive, and fun - and Carter left with more swag then I do when I go to shows!!! 

I was given the option to book Carter in for an in office treatment where he will be given laughing gas or to book a time for him to be sedated. 
I chose the laughing gas because I only want Carter to be put under if it really is the last resort.. The only thing that sucks with the decision to go with the laughing gas is that only one tooth can be done each time, so fingers crossed that this goes off without a hitch.. 

There is one thing weighing in the back of my mind.. 

Do you think that Carter will react to the laughing gas like this child...because honestly this is the vision I have after Carter is done.. 



Carter goes in this coming Wednesday, wish us luck!!

What have I been up to?...



Wow it's been a few days since I last posted.

First of all, Happy Anniversary to my awesome husband Kris!! Today we have been married for 7 years..(man where does the time go??) ...and I am still in love with him as much as I was the first day that I met him (which was in grade 12, yes we are high school sweethearts). I am looking forward to celebrating with dinner and a movie tonight while Grandma babysits!!

So where have I been? Well most of you know that I also work full time and this week was the Employment First conference. I am still reeling from getting to meet Hayley Wickenheiser who was the inspirational keynote speaker at the conference.

We were also getting ready for the garage sale that we held this weekend. A right of passage of being a home owner in my opinion, and a great way to meet your neighbours, but thank god it is over.

The birthday party season also continued and we celebrated one of Cart'er s friends 4th birthday this Sunday, which honestly I still can't believe that Carter is 4, his friends are 4, and time just flys by way too fast!  It's just another reminder that life is short and you need to take time for friends, family, and life!

To celebrate the end of it all we went in the hot tub and drank rum.

Worm update & answering your questions

So a little before Mothers Day, I left my compost worm bin outside and then thought I killed the compost worms.. Big sigh of relief though... I found them on Mothers Day!!! They are alive and well and still too teeny to get an actual picture of..but they are there!

Since I wrote my first post about our compost worms I have had a few people send me emails about worm composting. (Disclaimer: I am not a worm composting professional I just have done some research..hello Google!..and also talked to people who have compost worms..share the knowledge!!) 

1. Doesn't it stink?
Nope, not so far and it has been about a month.  From what I have been told, if it starts to stink then you have a. too much food in there b. you are not burying the food in the dirt c. you need a bigger container.

2. What do you keep them in? 
A rubbermaid that is not clear (worms like the dark) and hubby drilled some holes into the lid. Easy peasy. You can buy actual worm compost containers if you want. You can also DIY so many - check out this website for a DIY compost bin. 

3. Do they try to escape? 
They haven't yet, they are way too small. And if you do find that you have worms trying to go AWOL then you have made their home too wet or too dry. I add a 1/4 cup when it looks a little dry, and add it to each corner. You may just also need a bigger bin. 

4. So how do you use it in your garden? 
First of all lay a flattened card board box on the ground. Now bring the bin out, take the lid off and set it in the sun fora 10 minutes or so. This is so the worms go to the bottom. You then take a layer off of the top and put it on the card board and let it sit in the sun so that if there are any worms in there they die. Then you use it as you would any other compost. 

5. Why do you put it in the sun? 
Well compost worms are called Red Wiggler worms. If you put them directly into the dirt with Earth Worms they will kill the Earth Worms. Let's not create an apocalypse k?  So basically the dirt goes into the sun to kill any potential worms..

Car seat recycling in #yeg....FINALLY

 

I am excited to hear that Weehelp, a local not for profit group in Edmonton, is taking in car seats to be recycled. Once they are received here, they are taken to Vancouver to be recycled.

So why is it good to recycle your car seat instead of just cutting the straps and putting it in the garbage?? There are a few!
  • It keeps unnecessary items from being put into the landfills 
  • The plastic from the car seats can be broken down to make other items such as plastic patio furniture, butter tubs, and other children's products
  • Other items are disposed of correctly, efficiently, and the most environmentally friendly way as possible.

A lesson in preserves - Learn to make Jam and support local initiatives.

I have always wanted to learn how to make my own jam, but honestly the process intimidates me..(I am sure that goes for many). But what if there was a class that taught you how to make jam, by knowledgeable cooks and for an affordable price?? 

I am super excited to hear about the local Not for Profit group Fruits of Sherbrooke and their new jam making classes being offered through the Westmount Community hall. 

For $50 , two very knowledgeable cooks help you to learn two jam making methods (Traditional & Freezer) AND you get to take home 8-10 jars of your finished product when you're done. What else do you take home?? Knowledge! The ability to be able to preserve in your own home because you know how to! Plus, jam makes great gifts! (Christmas, wedding favors, shower favors...)

FREE fishing in Alberta for the long weekend - May 16th-19th


Attention avid fishers - grab your tackle boxes and get ready to fish.
From May 16th - May 19th the Alberta Government is allowing you to fish for FREE in any lake or river!!! 
Why is it free? Because there was such a huge amount of traffic trying to get licences online for this weekend and the system couldn't keep up.

My favorite birthday party venues

We have attended our fair share of children's birthdays in the last 4 years. We have also had to rent space for Carter & Sophie's birthday as our small condo couldn't even fit our immediate family let alone friends and extended family.

This year was different - we had room.  However, there are still people out there that are looking for places to hold their children's birthday parties and I definitely have some favorites!

1. Millwood's Recreation Center- We had Carter's first birthday here and rented the play room upstairs for after swimming. Awesome, warm pool, lots of space, and the party room has lots of kids stuff to play.
The City of Edmonton unfortunately messed up with my original pool booking plans so we actually got the Millwood's Recreation Center for free, but if you were to rent it for an hour of swimming and the party room it would cost about $300.

2. Next Community Church - We had Carter's 2nd & 3rd birthday here. Such a great place! It is the old location of the St. Albert movie theatre which was renovated into a church. The cool thing about this place is that they kept one of the theatre's so you can have a movie screening as well as a play area with enough space for a lot of children plus jungle gym. All of this costs $195 for 3 hours.  For an extra fee of $50 you can also rent the games room which has pinball, video games, air hockey, and foosball. The rental also includes use of the pop machine. (These are birthday party rates, other uses are other fees)

3. The Toy Hutch - We have been to a few birthdays here and it's a great place. It's clean (which is always a plus on my side) and both Sophie and Carter love the bouncy castles. EVERY time we have been here the kids have fallen asleep on the ride home. It's that much fun.

4. Fountain Park Recreation Centre - I had never been to this pool until we were invited to a birthday party there earlier this year. I actually prefer this pool to the other St.Albert pool. You can rent the pool for a private party or you can host a party during public swim hours and rent a meeting room or the preschool play room for cake & presents afterwards.

MMMMMM Marshmallows


Marshmallows aren't neccesarily healthy but there is a way to try to make them healthier.

I have spent quite some time looking for some Marshmallow recipes that do not include corn syrup, or require a crap load of ingredients..and I finally found one via The Urban Poser. 
(Such an AWESOME blog- check it out here

You will need: 
Baking thermometer
Medium sized pot
Mixing bowl 
Hand mixer/stand mixer
9 X 12 caserole dish
Butter- to grease pan
Parchment paper
1 cup of water 
2 1/2 tbsp powdered gelatin. (I used knox)
1 cup honey
1 teaspoon vanilla extract
1/4 teaspoon salt
Icing sugar to coat 



Grease the pan with butter and line with parchment paper in both directions. (Yes you are putting the parchment paper over top of the butter) Grease the parchment paper again with butter and sprinkle with a layer of icing sugar
Put 2 1/2 tbsp powdered gelatine into a bowl with 1/2 cup of water.  Let it "bloom" for 10 minutes.  (Basically it will gel) 
Put the other 1/2 cup of water in the pot with the 1 cup of honey and the salt. Keep burner between medium and high.  (This is where you use your candy thermometer)  Boil the mixture until it reaches a temp of 240 degrees. You will need to stay close as the mixture will foam so you will need to stir and play with heat. It may take a little bit but eventually the mixture will reach 240 degrees.
Pour the honey mix and gelatin into the the mixing bowl. Put the mixer on medium and take turns pouring the honey mixture and gelatin **Remember the honey mix is very hot so try not to pour into the beaters as it could splatter and burn**
Turn the mixer to high and continue beating until the mixture triples in volume, becomes light in color and the cream is just cool to the touch. (It will basically look like the marshmallow creme that you can buy in stores) 
Add vanilla and beat until it is fully mixed in. 
**You will know that the mixture is ready when it holds it's shape before falling**
Pour the mixture into the line pan and smooth the top once it is all poured in with a spatula or something that will give it a smooth surface.  Sprinkle the top with icing sugar
Let the marshmallows set in the refrigerator for at least 4 hours (I would let them set for at least 6 hours) 
One the marshmallows are set flip out onto a cutting board and pull the parchment paper off the top. 
Cut the Marshmallows into pieces and coat them more with icing sugar
Store in an airtight container and enjoy this tasty treat! (They will keep for up to 4 days)  

These marshmallows are yummy, the kids loved them, and the texture is very close to the regular marshmallow texture. While these are yummy- because this recipe doesn't contain corn syrup and sugar this is not a good recipe to make if you are looking for marshmallows to roast. The sugar and corn syrup are the ingredients that crystallize and hold the shape - honey melts. 
The snack like the one on the skewer with the raspberries and blue berries was amazing. (Seriously raspberries and marshmallows are DELICIOUS together)

Double stuffed potatoes - make ahead summer meals- yummy and freezer worthy





I am always looking for meal prep ideas to use during the week. Both Kris and I  don't make it home until 5:30/6:00 some days,  so a full meal prep with 2 little kids doesn't always work out for us. Another common theme- we all want our food to be tasty, kid friendly, and healthy.... 


Double stuffed potatoes are a side dish that can be made a healthy or unhealthy as you want.  You start from the basics and then you add from there. 

What you will need:
  • Baking sheet
  • Tin foil to cover baking sheet
  • 10 Potatoes (what ever ones you prefer baked, but the bigger the better...) 
  • 2 1/2 shredded cheese
  • 1/2 cup of Sour Cream 
  • 1 Tbsp of Butter
  • Salt to taste
  • Pepper to taste 
  • Mixing bowl to mix the potato mixture
  • Knife to cut baked potatoes
  • Spoon to scoop out baked potato/mix potato mixture/spoon back into potato 
  • Freezer bags if you are making these for another day. 

Directions:
Preheat your oven to 425 degrees 

Cover cookie sheet with tin foil 

Wash potatoes, leave skin on or leave then "naked" as some would say (Carter thought it was funny that I said naked potatoes..ha ha ha..kids)

Pierce the potatoes in various places with a fork. 

Place potatoes on cookie sheet and put in the oven for at least 1 hr. 


***Every persons oven is different. Potatoes will need at least an hour but they may need longer. When an hour is up, you can check them by seeing if a tooth pick or a fork pierces into the potatoes easily. If it does not put it in the oven for another 20 minutes. Repeat until the potatoes are able to be pierced. Sometimes the bigger the potato the longer it takes***

Shred cheese while waiting

Once potatoes are finished baking you will need to work fast, and yes the potatoes are hot. 

Put on an oven mitt and hold the hot potato in the hand with the mitt on. 

Cut the potato in half and scoop the baked inside of the potato into a mixing bowl. 


Leave a little bit of potato on the sides to act as a form for the potatoes 
Once all potato filling has been scooped out mix it with 1 1/2 cup of cheese, 1/2 cup of sour cream, and Tbsp of butter.  Mix in with potatoes. 
**If you feel that this is too much or too little ingredients add or take away as you see fit**

Once mixture is fully mixed scoop back into the potato shells 
Sprinkle remaining 1 cup of shredded cheese on top of the potatoes
If you are planning on eating these right away- pop them in the oven just long enough for the cheese to melt.

If you are planning to freeze these - put them on the same sheet that they were on originally cover with plastic wrap and place them in the freezer so that they can "flash freeze".

Once they have frozen a little bit divide them into freezer bags. 
I put 2 to a bag, which works out to a nice amount for lunch and also for planning for dinner. 

Extra toppings - You can be creative with other ingredients to put into the potato mixture. 
Sauté some chopped onions 
Fry up some bacon and cut up into small pieces
Add a Tbsp spoon of cream cheese 
Try a mixture of cheese- mozzarella? Parmesan? 

One thing to consider.. green onion tastes great on a potato but it does not taste great after being frozen. Fresh is always best with green onion. 

My mouth is watering writing this....mmmmmmmmmm.....

Turkey and zucchini meatballs with greek yogurt dipping sauce

Last summer I decided to sign up for a Momstown membership. 
One of the perks of the membership is a year subscription to Today's Parent which has some pretty awesome recipes. One of those recipes being the Turkey and zucchini meat balls with a greek yogurt base dipping sauce. The recipe that I made has some adaptations but you can find the recipe that inspired me here.



Ingredients

Turkey & zucchini meatballs 
1tbsp of butter
1 cup chopped onion
1 tsp chopped garlic
1 lb ground turkey
1 1/2 cups shredded zucchini
1/4 tsp bbq sauce/vinegar
1/4 tsp salt 

Greek yogurt dipping sauce
1/2 cup plain greek yogurt
1 tsp lemon juice
1/4 tsp lemon zest
1/4 tsp of mince garlic 
pinch of sugar
pinch of salt




Instructions

Combine all ingredients for greek yogurt dipping sauce, mix, and let sit in a fridge until ready to serve. 

Preheat oven to 425 F
Grease rimmed baking sheet
Heat butter in a frying ban
Add onions and sauté until onions are lightly browned
Add garlic and sauté for 1 minute
Remove from heat and put onion/garlic mix into bowl 
Add turkey and grated zucchini into bowl and hand mix
Add in bbq/vinegar mix and salt
Form into golf ball size balls on prepared pan
Bake for 18 minutes or until cooked through

Once taken out of the oven plate and serve with yogurt dipping sauce and enjoy. Mmmmmmmmm

This is a dish that is easy to make, healthy, and it is absolutely delicious. 
Want to make these ahead for another time?? Meatballs freeze GREAT.

Happy Birthday to my baby Belle
















Happy 2nd Birthday to my Sophie Belle. 
This little girl loves to follow her older brother, has the gift of gab, and can nap like nobodies business (4 hrs!!!!). She knows what she wants, she's feisty, and is known for her stone cold face during situations that she doesn't like or isn't sure of and I wouldn't have it any other way. 
I am so lucky to be her mommy and I blessed to have this amazing little lady in my life. 
Happy Birthday Soph!!!
